Today was easier than I expected (as the book told me it would be). Last night I prepped the veggies I would be using for breakfast and dinner which made it super easy to get meals started today.
Breakfast: Eggs scrambled with onions, red peppers, and chorizo. Have I told you how happy I am that this is an acceptable food to eat? I had black coffee with breakfast, too. However, I was reading the Whole30 book while I ate, so I didn't remember that it was black until I drank a sip. It's definitely not as bad as I was expecting. I also ate a banana before heading to yoga.
After yoga, I had to run over to pick up my kiddo and stopped to get another cup of coffee (mostly because I hadn't had much of mine this morning and I was hoping Seattle Espresso had better tasting black coffee). I added a sprinkle of cinnamon to it and it was ok, though not something I'd probably do again.
Lunch: On the meal plan for the week, I was supposed to have a chicken salad. However, I didn't have any prepared chicken, so I was planning on having bacon, spinach, and avocado wrapped in Boar's Head turkey. When I pulled out the ingredients to make the turkey wraps, I happened to read the ingredients list.
Dinner: I made this yummy minestrone recipe from Our Paleo Life. Putting it all together was super easy since I had prepped the night before, plus the house smelled good all day and it was delicious!
I've been carrying water around with me all day to make sure that I stay hydrated and to *hopefully* help any possible headaches that I will encounter over the next few days.
Now that I'm having to focus on what I'm eating, it's making me realize all the little things I used to do that I wasn't aware of that I did (and how much of it I did).
Such as:
- wiping the little bit of dribbled syrup off the container and licking it off my finger
- nibbling at the sugar crumble topping of a blueberry muffin while picking it off for a kiddo
- sampling my kids' food when they don't want the crust/last bite of cheese/leftover lunch or dinner, etc.
- snacking in the pantry
- craving a second cup of sugary coffee at 11:00 instead of eating lunch
I'm looking forward to what tomorrow brings. Time to go prep...
