I'm sorry I've been gone for the past three days. I PROMISE that I have NOT broken my pledge to complete the Whole30 challenge. I've been keeping myself occupied with family and work, thus the blog has taken a back seat. As has running (which I'm not too keen about at the moment).

Day 8 - Monday, January 11
Breakfast: Scrambled eggs and bacon with fruit
Lunch: Leftover Creamy Avocado Pasta with shrimp
Dinner: Pad Thai from Our Paleo Life. I opted to leave the chicken out of the recipe because I didn't have any cooked or thawed chicken on hand. My husband and I both agree that it was definitely needed the next time around. We also added some of our garden carrots which helped give it a little crunch since we didn't top it with nuts. The taste was a little different because it used sunflower butter rather than peanut butter. I'm sure you could use whatever nut butter you have around the house. I've come to really love the taste of sunbutter, as has my eldest kidlet. This recipe is definitely going to be a long time keeper!

Dinner: Chipotle. Oh. Yes. Chipotle. I had attended a bridal open house this evening and thought I'd be able to stop and grab some dinner on the way. Since I was running a little behind, I decided to wait until afterward. BAD IDEA. Not only was I hungry, but I was surrounded by a Tia Rosa food truck, cake samples from Piece of Cake, and the food from the catering company. Oh. AND FRACTURED PRUNE DONUTS. They even came around the to vendors (like me) and asked if we wanted some to take home. Me? Take home donuts?! Yeeeeeee......NO. I said no. SMH. And you know what? It wasn't that hard to do. After the event was over, I stopped at Chipotle to treat myself for saying "no" to a donut. I had read a lot online that the only Whole30 approved meat at Chipotle is the carnitas, so I ordered a carnitas salad with guacamole, pico, and red salsa. YUM! I must admit that I was craving some chips and cheese though.
Day 10: January 13
Breakfast: I attempted to make those avocado egg cups that you see all over Pinterest and those cooking videos that pop up on your Facebook feed all the time. Well, let's just say that my first attempt wasn't as successful as I imagined it to be. First of all, the pit in my avocado was too small so when I put the egg into it, everything fell out. I dug out some of the avocado to make the space larger and it held a bit more. My avocado may have been a bit too under-ripe still or it didn't cook long enough because it was too hard. I had some bacon on the side to help add some crunch to the runny yolk. Not bad, but not great. Maybe next time...

Dinner: Leftover spaghetti. I added some chopped spinach and let the heat from the meat sauce wilt it. So good!
Ok, time to go! Hope to get some good running this weekend!
P.S. I had a dream last night that I ate a cookie. As in I took the cookie, put it in my mouth, started chewing, realized what I was doing, spit it out, then rinse my mouth out multiple times. For the first few hours of the day I kept thinking that I had somehow ingested an unapproved food!
