Well, what do you know? I did it!
I successfully completed the Whole30 challenge and I feel pretty freakin' fabulous.
My apologies for not being that great about posting my meals this last half, but I will share some of my thoughts from this experience.
- It wasn't as hard or challenging as I thought it would be. Yes, I was tempted by food others were eating. Yes, I craved eating a donut or wanting flan or needing some chips when I ate salsa. But I'm glad I didn't cave in. Or Maybe it was because we already ate relatively well to begin with. Or maybe it's because I enjoyed eating good, nutritious food because it's DELICIOUS.
- Saying "no, thank you" became a lot easier to do. I passed up many delicious desserts at wedding events I attended - Fractured Prune donuts, top notch desserts from wedding venues, my kids trying to shove their food into my mouth.
- I've fallen in love with eggs again. Before starting, my breakfast would typically consist of pancakes or frozen waffles with frozen sausage. Sometimes I'd make a yogurt parfait or oatmeal. I'd only eat eggs if my husband offered to make them. Now, I look forward to making breakfast each morning and knowing that I'm FUELING my body with good foods. Yeah, it can get tiring having eggs every morning, but making fauxtmeal helped a lot.
- My clothes fit better. I tried on some articles of clothing that I hadn't worn in a while and you know what? They were looser than before. SCORE.
- I found new recipes for my toolbox. Creamy Avocado Pasta, Coconut Chicken, Pad Thai, Fauxtmeal, Baked Cinnamon Apples, All Day Fritatta, Chorizo Burgers
- I've eaten more sweet potatoes than I can count. Oh, how I love them. My eldest has fallen in love with baked sweet potatoes, too!
- I rarely purchase anything that's not located on the outside of the grocery store (minus coconut milk).
- I've become so much more aware of what my KIDS are eating!
- Black coffee actually tastes great when it's not the super cheap stuff! But I still like to add coconut milk to it if I find it too bitter.
- I haven't gotten as many headaches as I did BEFORE starting. Also, I don't seem to crash around 3:00 in the afternoon.
- I don't know what's next. This has been the hardest question for me to answer when people ask what I'll do once it's over. I'd love to continue eating good food for my body, so I'm going to stick with it and maybe have little nibbles here and there of other foods. What I'd hate is to go back to my previous eating habits entirely because it will feel like a waste to me. What I do know, is that I'll be having a glass of wine with my dinner tomorrow...I think.
